Hey everyone welcome , my name is Shantel and im in college. i'm not only looking to lose weight I want to be fit and healthy and maintain it in my lifestyle. 2012 is the year I stop dreaming, and start doing. 250 Calorie Protein Packed Healthy Baked Falafels
What you will need:
-1 cup chickpeas (drained)
-3 tbsp fresh chopped parsley
-2 tbsp finely chopped onion
-2 tbsp garlic
-1/4 tsp cumin
-1/4 tsp paprika
-1/8 tsp baking powder
-1 tbsp flour (I used white but would recommend whole wheat)
- Lemon juice of 1/4 of a lemon
Instructions:
-Preheat over to 375 degrees
-Combine all the ingredients in a bowl or small pan.
-Using a fork or a masher and mash all the ingredients together until all the chickpeas are smashed, do not smash it too much, you do not want it to be too smooth.
-Using a spoon scoop out some of the mixture and form into patties, they should be about 2 inches wide and 1/2 thick.
-Place on a baking sheet sprayed with non stick spray
-Bake in the oven for 15-25 minutes, make sure you are watching them, when they have browned they are done.
-Serve however you like ( I like mine in a pita pocket with hummus, pickles, and greek yogurt)
